Bun bo Hue – A rustic dish prepared with royal style

Bun bo Hue, or Vietnamese spicy beef noodles soup, has originated in Hue, a longtime ancient capital of Vietnam, and has now become the signature dish from the city of Hue.

Rustic cuisine and royal cuisine of Hue has some similarities because imperial chefs were from the countryside, then they have prepared foods using simple elements for long with the cooking style of the former royal court. Later, local cookers preserved the beauty of both kinds of the cuisine to create their own recipes for a lot of regional delicacies today including bun bo Hue.

The combination of bun bo Hue is rice vermicelli, meat and long-simmered broth.

The rice vermicelli used to make bun bo Hue dishes is soft, thin and springy. This dish is served with tender slices of marinated and boiled beef shank, oxtail, meat balls and an indispensable ingredient - dense and slightly chewy blocks of pork blood.

The secret of making an incredibly stunning stock is timing. It takes around 13 hours to simmer, along with beef bones, beef shank and lemongrass. During the cooking process, sauté sauce is added to the pot of beef broth for coloring. Toppings such as cilantro, green onions are added before tasting according to eaters’ appetite.

Hue local people always put love into their foods. That is the reason why local dishes require many efforts to make from preparing the ingredients to the process of cooking the dish.

Moreover, Hue is the origin of spicy foods in Vietnam for a long time. So it is reasonable that the crown dish of the city has featured spicy flavors.
